豆腐紅豆芝士蛋糕



今日奶奶生日,都係整個感覺健康d的蛋糕送俾佢!

參考自Katie0599再作修改(6"cake)

餅底(鬆酥皮-精巧甜品diy)
flour 120g
butter 60g
sugar 30g(個人覺得太甜,下次要減糖)
egg 1/3 隻

1. 將已篩麵粉、糖和室溫牛油搓成粒狀,加入蛋液搓勻
2. 以保鮮膜包好,冷藏30mins
3. 取出以麵棍將麵團碾平至餅模大小,並在麵團上刺上小孔
4. 於在已預熱焗爐用180度焗約15mins,待涼備用

紅豆芝士餡 -
cream cheese 50g
sugar 10g
whipping cream 90g
紅豆蓉 125g
魚膠粉 3g

豆腐芝士餡 -
cream cheese 50g
糖 18g
whipping cream 85g
蒸煮豆腐 155g
魚膠粉 5g

紅豆/豆腐芝士餡做法:
1. 打起whipping cream備用
2. 將cream cheese加入糖打成滑身,將紅豆蓉/豆腐逐少加入拌勻
3. 將魚膠片用涷水浸軟,座熱水將之溶解,然後加入(2)中拌勻
4. 再加入己打好之淡忌廉便成

倒模的做法:
a. 先將鬆酥皮放在模底
b. 將紅豆芝士餡倒入酥皮上,放入冰格雪至表面凝固
c. 將豆腐芝士餡倒在已凝固的紅豆餡上,再雪至凝固即成
