咖啡二重奏


樣子怪怪的湯種咖啡包包

上 個星期己經諗住要做呢個咖啡包包,但係因唔夠時間的關係擱置左,咁今日難得咁早返到屋企,梗係拿拿聲扲 d 材料出來磅啦,因為我有兩本麵包書都有教整呢款包,咁用邊個 receipe好呢?後來都係用左湯種o個個,因為諗住有時間同埋見到 d網友都好鍾意整,話會軟熟 d喎,咁就試下啦.............整呀整,我既搓粉技術都係未合格,要搓成四十五分鐘先有薄膜形成,跟住發酵、整型、再發酵、跟住入埋爐都成十 點幾,唉,仲諗住今晚十點半之前就可以o訓覺添!終於出爐喇,個樣有 d怪怪地,都整唔到好似本書咁添.........但係好香咖啡味喎,咁就即刻試一個,嘩.....好苦呀,下次我諗要減一半咖啡粉先得,不過唔緊要,唔 試點知個 receipe o岩唔o岩自己呢!

而個咖啡雙色饅頭就係趁麵包發酵的時候整的,亦都係我今晚的晚餐,相比起個包包,味道就o岩o岩好喇,可能之前整過有經驗,所以一口氣食左三個咁多,唔.......好滿足呀!!!

Receipe of Coffee Bread (from 65oC湯種麵包)

高筋粉 190g
sugar 44g
salt 2g
yeast 4g
egg 20g
milk 50g
instant coffee 12g(我覺得好苦,下次減半)
湯種 60g
unsalted butter 20g

做法 -
1. yeast先用暖牛奶開勻around 5mins至有泡泡浮起
2. 將粉類材料拌勻加入yeast水和湯種搓成團才加入牛油,再搓至光滑成薄膜
3. 發酵40mins
4. 分成8份,滾圓,用濕毛巾蓋著再發酵10mins
5. 整形,放入己掃油焗盤中再發酵大概40mins
6. 放入已預熱焗爐用180度焗20mins,即成

湯種 -
500g 水
100g 高筋麵粉
用慢火煮至有紋路,便熄火用保鮮紙蓋著放涼便可.
